Cauliflower Mac n' Cheese

1 head of cauliflower (chopped up into chunks)
1 tbsp extra virgin olive oil
1 tbsp grass-fed butter
1 cup heavy cream
2 oz sharp cheddar cheese (shredded)
2 oz mozzarella cheese (shredded)
¼ cup Parmigiano (grated)

Preheat the oven to 450 degrees Fahrenheit.

On a large baking sheet, scatter the chunks of cauliflower and toss them with olive oil.

Place the baking sheet in the oven to bake for 20 minutes (or until the cauliflower chunks are light brown). Take out and let cool.

While the cauliflower is cooling, melt the butter in a medium-sized saucepan over medium-high heat. Add the heavy cream.

Reduce the temperature of the oven to 435 degrees Fahrenheit.

Turn off the heat of the stovetop and add the parmigiano cheese.

Stir to combine, then add half of the mild cheddar, and all of the sharp cheddar cheese.

Add the cauliflower into a medium-sized mixing bowl and toss in the remaining half of mild cheddar and 2 ounces of mozzarella. When the mixture is evenly combined, pour in
half of the cheese sauce and gently fold in.

Pour the cheesy cauliflower mixture into a small baking dish, and bake on the middle rack of your oven until bubbly (about 15-20 minutes).
