Pork Lettuce Wraps
The trouble with Asian food is that it's heavy on the rice and added sugars. But there is a way to make Asian food without the rice and added suagrs at home and it's just as delicious as going out and the added bonus...much cheaper. I was craving some spicy Asian food, so here is what I whipped up today.
Pork Lettuce Wraps
Ingredients (PICTURE #1):
Ground Pork (or chicken if you prefer)
A bunch of scallions
A head of bib lettuce
1 cup of shredded carrots
A can of chopped water chestnuts
1/2 cup of Soy Sauce (we do gluten free soy sauce in our gluten free household)
1 TBS Sesame oil
1 TBS Rice wine vinegar
1/2 cup of peanuts (leave out of course if you have nut allergies in your household)
Garlic Siracha, Siracha and Chinese mustard to taste if you like spicy!
Instructions:
Cut the bottom off of the bib lettuce head and rinse thoroughly. Pull individual bib lettuce leaves off and lay then to dry on towels or paper towels (PICTURE #2). Cut scallion bunch into 1/4 inch slices (PICTURE #3). Prepare a cup of shredded carrots. Take half a cup of peanuts and run them through a food processor or blender to make them into smaller peanut pieces. This will add flavor and texture to the ground pork. Drain the can of chopped water chestnuts. Cook the ground pork on medium heat in a sauté pan to about 80% done (PICTURE #4). Add the 1/2 cup of soy sauce, 1 TBS of sesame oil, 1TBS of rice wine vinegar, 1 cup of shredded carrots, the bunch of chopped scallions and the can of chopped water chestnuts to the sauté pan with the pork (PICTURE #5). Mix the ingredients together thoroughly. Cook for another 3-5 minutes until the carrots and water chestnuts have absorbed the seasoning. Add the peanuts to the sauté pan (PICTURE #6). Mix thoroughly and ensure the pork has cooked completely and slightly browned. Remove sauté pan from burner. Prepare bib lettuce leaves on a plate. Add scoops of the pork from the sauté pan. Dollop your favorite siracha or Chinese mustard (or both!) on top (PICTURE #7). Roll the lettuce wraps around the ingredients to create a "roll" or "taco" in order to eat. Enjoy!
