Sprouted Oat Blueberry Lemon Protien Muffins

We’ve got a delicious treat for you! Sprouted Oat Blueberry Lemon Muffins. These muffins are not only flavorful and healthy but also pack a protein punch with over 10g per muffin, all thanks to our Unflavored Prime Protein. Thanks to Equip Foods for this awesome recipe!

Ingredients: (Makes 12)

 

- 2 1/2 cups sprouted oats - half blended
- 2 scoops Equip Prime Protein Unflavored
- 1 tbsp Ceylon cinnamon
- 1 tbsp baking powder
- 1/2 tsp sea salt
- 3 pasture-raised eggs
- 1 1/4 cups organic grass-fed kefir
- 1/2 cup pure grade A maple syrup
- 1/4 cup melted butter, coconut oil, or avocado oil
- Juice and zest of one lemon
- 1 tsp vanilla
- 1 1/2 cups organic blueberries

Instructions:


1. Preheat your oven to 350F and line muffin tin w large baking liners.

2. In a blender, add 1/2 the oats (1 1/4 cup) and blend into a fine flour.

3. Add the oats and oat flour to a large bowl along with the protein powder, cinnamon, baking powder, and salt. Mix to combine.

4. In a separate bowl, add the remaining ingredients, excluding the blueberries, and mix to combine.

5. Add the wet to the dry and mix until no lumps remain and fold in the blueberries reserving a handful to sprinkle over top the muffins.

6. Add evenly to the muffin liners (the batter will go all the way to the top of each muffin but that’s okay) and place in the oven for 26-28 minutes or until lightly golden on top.

7. Let cool for at least one hour before enjoying. Store in the fridge for up to 3 weeks.
