Low Carb Egg Wraps
Wow! When I saw these on the All Day I Dream About Food Website, I’m not gonna lie, I kinda said “duh”! I can’t believe I never thought of doing this! Basically, you are making a crepe, but just with egg. You can literally put whatever you want in it. And a great I idea would be to make a bunch of wraps, and put choices of what you and your family want to put on them, then…roll them up!
HOW TO MAKE LOW CARB EGG WRAPS
The wraps themselves are ridiculously easy to make. I tried them with and without a little cream in the egg mixture and found that without was best. They puffed up too much and got too thick with the cream. Keeping them on the small side also makes them easier to flip over, so an 8-inch pan is your best bet. And whisking the eggs and cooking the wraps one at time means you don’t have to eyeball how much of the mixture to add to the pan.
I was aiming for an easy lunch recipe, and since one of my favorite sandwiches used to be a Club Sandwich, I filled mine with turkey, bacon, mayo, and tomato. The kids leaned more toward the ham, bacon, and cheese variety. But really, the sky’s the limit here. Think avocado, chicken, roast beef, smoked salmon, cream cheese, and so on. They’d even be great with tuna salad.
