Hawaiian Kabobs

These are simple and you can use any combination of veggies and meats to make amazing grilled sweet and savory dinner. It’s all about the marinade. I used two marinades with different meats in this recipe.

INGREDIENTS FOR KABOBS

Skewers (if they are wood or bamboo, make sure to soak them thoroughly so they don’t catch on fire on the grill)

Whatever meat you desire, cubed to be placed on the skewers

Whatever veggies, in this recipe we used zucchini, mushrooms and onions cut into pieces large enough to place on the skewers

Cubed pineapples

INGREDIENTS FOR MARINADE #1

1 cup of gluten-free soy sauce

1/4 cup of coconut sugar

1 cup of apple cider vinegar

2 TBS of minced garlic

INGREDIENTS FOR MARINADE #2

1 cup of gluten-free soy sauce

2 TBS of minced garlic

1/4 cup of chopped chives

2 TBS minced ginger

1/4 cup of pineapple chopped into small pieces

INSTRUCTIONS

Cube all the meat into skewer-sized pieces.

Place the ingredients for the marinade into a small saute pan. Place heat on medium and bring to a simmer, stirring frequently. After the marinade reached a simmer, take the marinade off the heat and let it return to room temperature. If you have time to marinate the meat for a few hours in the fridge, pour the marinade into a large container that you can seal or a large zip lock bag and place the meat in the marinade to soak for however long you have to marinate the meat. The longer, the better. The best would be to allow the meat to be marinaded overnight.

Place the meat and veggies at intervals along the skewers. Place the skewers on a grill on medium heat and cook the meat to your temperature. You can pour whatever leftover marinade onto the meat and veggies as they cook on the grill.

Here is a tip: Make some extra marinade on the side and have it available as an extra dipping sauce when you sit down to eat.
