DARK CHOCOLATE BANANA BREAD
Banana bread is the ultimate comfort food. Its soft and gooey and sweet. Add dark chocolate and cup of coffee and you got yourself a cozy fireside experience. And guess what? This banana bread is gluten and grain free has no sugar added! Yes, you have the natural sugars from the banana, if you are a stickler for no fruit, add banana extract instead of the actual bananas. Enjoy (and save me a slice!)
Ingredients
1.5 cups almond flour
1/2 cup unsweetened cocoa powder
1.5 tsp baking powder
1 tsp salt
1/2 cup full fat plain greek yogurt
1/2 cup alternative sweetener of your choice (we recommend Lakanto Monkfruit Sweetner)
1 large egg
1 TBS vanilla extract
1/2 cup whole full fat milk
2-3 very ripe bananas (must be a deep yellow with some brown spots, you don’t want to use starchy green bananas)
OPTIONAL: 1 cup of sugar free dark chocolate chips (we recommend Lilly’s sugar free chocolate chips)
Mix dry ingredients in one bowl and wet ingredients in a separate bowl. Then blend the contents of both preferably mixing with a mixer. Ensure that your bread mix is the consistency of mud and pour into a loaf pan (bonus, slice 2 paper thin slices of a banana the long way and lay on top like the picture!)
Bake for 50-55 minutes at 350 degrees.
