Rustic Tomato Chicken, Broccoli and Mushrooms
This is a great recipie for a Sunday meal prep for the week. A slow cooker is required for this recipie or you can cook on a stove top on low in a large covered pot.
Ingredients
1 Cup sliced white mushrooms
1 head of broccoli, chopped
6 slices of bacon, chopped
1 Cup chopped white onion
1/4 Cup tomato paste
4 Teaspoons minced garlic
1/2 Teaspoon thyme
1/2 Teaspoon parsley
1/4 Cup dry white cooking wine
2 Tablespoons instant tapioca pudding powder
4 large chicken breasts
Salt and pepper to taste
Put mushrooms, bacon, onion, tomato paste, garlic, thyme and parsley into a microwave safe bowl. Heat for 5 minutes in microwave. Stir ingredients together. Add wine, tapioca and stir. Add salt and pepper to taste. Salt and pepper chicken breasts to taste and place them on the bottom of the slow cooker. Pour the microwaved ingredients on top of the chicken breasts and spread into an even layer. Place the broccoli on top of the microwaved ingredients in a single layer. Cover and cook on low for 3-4 hours in a crock pot or a stove top pot.
Once chicken is thoroughly cooked, transfer chicken to a serving dish. Pour braising liquid and cooked vegetables on top of the chicken. Garnish with some grated parmesan cheese and pasta or rice (if you are a carnivore). Serve and enjoy!
